Roast Eye Fillet Beef – Finish at Home (Christmas)

Tender eye fillet cooked low and slow for even doneness, then snap-frozen. Defrost, finish in a hot oven or pan, rest and slice.

Beautifully tender roast beef without babysitting the oven.

We cook eye fillet low and slow (sous vide style) for even doneness from edge to centre, then chill and snap-freeze it. That means you get perfectly cooked beef that only needs a quick finish in a hot oven or pan before slicing.

As a guide, our small roast (approx 1 kg) will:

  • Serve around 4–5 people as the main meat, or
  • Up to 6–8 people when you also have ham and/or turkey on the table.

Our large roast (approx 1.5 kg) will:

  • Serve around 8–10 people as the main meat, or
  • Up to 10–12 people as part of a three-meat spread.

At home you simply:

  1. Defrost in the fridge
  2. Pat dry and sear / roast for 10–15 minutes to add colour and heat through
  3. Rest well, then slice across the grain

What you get:

  • Whole seasoned eye fillet roast (size depends on variant)
