Chicken and Cheese Toastie (Gluten Free)

Poached Chicken mixed with whole egg mayo topped with cheese on sliced gluten free bread. It doesn't get much simpler than this. Great in the sandwich press, warmed in the oven/air fryer - or just as a light meal on its own at room temperature!
