Pumpkin, Bacon, Spanish onion and Feta quiche

This little meal packs a punch. Featuring the lovely butternut Pumpkin, bacon, red onion and feta which all bring the nice balance of sweet, salty and bite! I enjoy these for lunch with a side salad, but they also make a great breakfast on the run, or a light dinner.
